The Saag needs a wine with acidity to cut through the richness of the lamb or paneer, but needs enough about it to stand up to the smoky flavour of the back cardamom.
Ingredients: Bag 1: black cardamom, Kashmiri chilli, cinnamon. Bag 2: ginger, turmeric, cumin, ground coriander, fenugreek, paprika, chilli powder, asafoetida. Bag 3: garam masala.
